Ingredients:

  • Duck leg - 250 g
  • Duck fat - 100 g
  • Thyme - 1 sprig
  • Rosemary - 3 branches
  • Shallots - 2 heads
  • Garlic - 2 cloves
  • Black pepper - 3 pea
  • Salt and pepper - to taste




Preparation:

1. Rub the duck leg with coarse salt and place in the refrigerator for 48 hours, then cleaned of salt.
2. In a deep pan put a cold duck fat, thyme, garlic, pepper and duck leg.
3. Simmer over low heat for 2 hours, then leave to cool for 1 night.
4. As such, the leg can be stored for a long time, it is important only that it was all covered with grease.
5. Before serving, fry the leg in a pan until crisp.
Which sauce to serve. Usually before serving duck leg watering brown sauce, which was formed during cooking. Some advise gravy flavored with honey.
What to apply for garnish. Mashed potatoes (classic version), young vegetables, roasted preferably in duck fat.
