Lentils Salad With Spinach Recipe

Ingredients:

  • Green lentils - 250 g
  • Sun-dried tomatoes - 120 g
  • Shallots - 2 pcs.
  • The oil from dried tomatoes - 2-3 tbsp
  • Spinach - 60 g
  • Parsley - 1 bunch
  • Salt and pepper - to taste.




Preparation :

1. Rinse lentils and leave overnight flooded. In the morning drain the water, pour new water in a ratio of one to two, put to cook until done (all the water should be absorbed).
2. Peel Onion and cut into small cubes. In a frying pan heat the oil and fry the onion over medium heat until soft, add the chopped parsley, stir, add the lentils finished. After a few minutes add the whole or chopped sun-dried tomatoes. Dish simmer on low heat for 5-10 minutes under the lid. Add salt and pepper to taste.
3. Separately, fry and washed  the spinach. Arrange on plates lentils, spinach on top.
