Ingredients:

  • Baking powder - 4 tsp
  • Soda - 2 tsp
  • Walnuts and Pecans - 150 g
  • Coconut - 80 g
  • Coconut cream - 300 g
  • Mascarpone - 400 g
  • Powdered sugar - to taste




Preparation:

1. Sift the flour, add the spices, salt, baking powder and salt and whisk to mix.
2. In a separate bowl beat 4 eggs, add sugar and melted butter.
3. Chop Carrots and add to the same, beating 5 minutes, then add chopped nuts, coconut and mix.
4. Combine the two mixtures and pour into a mold. Bake for about an hour at 175 ° C.
