Ingredients:

  • Eggplant - 2-3 pcs.
  • Olive oil - 15 ml
  • Tomato sauce - 200 g
  • Mozzarella pizza (hard) - 20 g

For filling:

  • Low-fat cottage cheese - 2 tbsp
  • Ricotta - 200 g
  • Mozzarella pizza (hard) - 40 g
  • Salt and pepper - to taste
  • Basil for decoration







Preparation:

  • Preheat oven to 190 ° C.
  • Cut the eggplant lengthwise into 11 slices about ½ cm thick.
  • Evenly lubricate the eggplant slices on both sides with olive oil.
  • In a frying pan over medium heat, fry the eggplant for 2-3 minutes on each side until tender.

  • While the eggplant slices cool, mix all ingredients for the filling in a medium bowl.
  • Then put 1 tsp filling the edge slices of eggplant and roll up tight roll. Repeat with all the slices.
  • Fill baking dish with tomato sauce, put the rolls and sprinkle with mozzarella.
  • Send rolls baked in the oven for 15-20 minutes until the cheese crust.
  • Allow the rolls to cool for 3-5 minutes and serve!
