Eggplant Rolls Recipe

Ingredients:
- Eggplant - 2-3 pcs.
- Olive oil - 15 ml
- Tomato sauce - 200 g
- Mozzarella pizza (hard) - 20 g
For filling:
- Low-fat cottage cheese - 2 tbsp
- Ricotta - 200 g
- Mozzarella pizza (hard) - 40 g
- Salt and pepper - to taste
- Basil for decoration
Preparation:
- Preheat oven to 190 ° C.
- Cut the eggplant lengthwise into 11 slices about ½ cm thick.
- Evenly lubricate the eggplant slices on both sides with olive oil.
- In a frying pan over medium heat, fry the eggplant for 2-3 minutes on each side until tender.
- While the eggplant slices cool, mix all ingredients for the filling in a medium bowl.
- Then put 1 tsp filling the edge slices of eggplant and roll up tight roll. Repeat with all the slices.
- Fill baking dish with tomato sauce, put the rolls and sprinkle with mozzarella.
- Send rolls baked in the oven for 15-20 minutes until the cheese crust.
- Allow the rolls to cool for 3-5 minutes and serve!
